The wine is produced only in very good years of harvest. Maceration is carried out at a controlled temperature punching caps for 20 days. Fermentation takes place in stainless steel tanks. Excerpt lasts for 15 months in new French oak barrels of 225 liters and then another year in the bottle.

Thanks to the care of plants and aging in small French barriques, Bologna was able to shake the wine world, creating a rich and complex wines from varieties that were previously considered only subsidiary. Today the company is successfully managing Anna – Giacomo’s widow and children – Raffaella and Giuseppe.
