Description
“Dominio de Azes” Blanco – fresh Spanish dry white wine made from Viura grapes, which is grown in the company’s vineyards in the Rioja region. The vineyards are located in elevations influenced by the Atlantic climate, and are protected from the cold northerly winds. The grapes are harvested by hand in 15 kg plastic boxes so that the fruit is not squeezed until it reaches the winery. This is necessary in order to preserve the aroma of the fruit, as well as the complexity and structure of the future wine. At the winery, the bunches are selected one at a time on a sorting table, after which they are peeled from the stems and crushed. The juice is placed in steel vats in the form of truncated cones and subjected to cold pre-fermentation maceration for 24 hours to extract the maximum amount of fruit aromas. Fermentation takes place at a controlled temperature. The small volume of the tanks, from 8000 to 15000 liters, allows complete control of the process. The wine is aged in new French and Hungarian oak barrels for 2 months at a computer-controlled temperature and humidity.
