Description
Perfect balance of four grape varieties and individual approach to winemaking – the key characteristics of wine “Amedeo”. Late harvest grape varieties Trebbiano and Trebbyanello (clone Tokaj) are ideal for aging in oak barrels. Fragrant Cortese well vinified and aged in stainless steel vats and bright Garganega, on the contrary, the best is fermented and aged in barrels made of Slavonian oak volume of 15-20 hectoliters. Before pressing berries strongly cooled to increase the intensity of flavors and development potential. After assemblage in late May, the wine spends a few months in the bottle and goes on sale in July.
Winery Azienda Agricola Cavalchina was founded at the beginning of the XX century, together with the purchase of a family Peony first vineyards in the village of Custoza in Soave. Pretty soon, wine Cavalchina acquired fame and popularity, and winemakers Peony was decided to call the wines of the region of origin – Custoza, Soave and not, as it was until now.
The philosophy of production on the farm Kavalkina is based on three pillars – the local terroir, meticulous care of the vines and a perfect vinification. Grape varieties are selected in accordance with the climatic and soil conditions, but yields consciously remains low – so the berries remain healthy and juicy. Therefore wine Cavalchina quite rare, but always great.
