Description
To create a red dry wine Caprili, Brunello di Montalcino DOCG, the producer uses Sangiovese grapes collected from the vineyards of Kvardrucci, Pinot and Cheppo Niro, located at an altitude of 225-340 meters above sea level. The soil of the vineyards is predominantly clay with a generous content of lime and sand. Age of vines ranges from 15 to 25 years. Crop harvested by hand. Spontaneous fermentation takes place at a controlled temperature in steel tanks and lasts no more than three weeks. Malolactic fermentation takes place in cement tanks. Excerpt wine lasts 36 months and is carried out in large Slavonic oak barrels, and then another 4 months in a bottle.
