Description
Corte Aleardi, Valpolicella Ripasso Classico Superiore “Montepala” DOC is a dry red wine made using a technique inherited from peasant traditions and based on secondary fermentation using the pomace of Amarone wine. Several grape varieties are used for its production, mainly Corvina, Corvinone and Rondinella. The plots are located in the hilly area of “Montepala” with a southern orientation. The harvest is collected from mid-September to mid-October. The grapes are gently crushed and undergo primary fermentation for several weeks. Then a secondary fermentation is carried out on slightly dried grape skins, which remain after the production of Amarone wine. The wine matures for 18 months in Slavonian oak barrels and 6 months in the bottle. The annual production volume is about 3,000 bottles.
