Description
Fabiano, Valpolicella Classico Superiore “Ripasso” – high-end wine is derived from the terroir and the splendid ancient technique “Ripasso” a deep, almost black color and concentrated flavor. To create a wine Fabiano uses grapes grown around the old village of Negrar in the Valpolicella region where the vineyards lie on the slopes of the hills, at an altitude of 300 meters above sea level. This hilly and hot land provides optimal conditions for the cultivation of local grape varieties that are adapted to the climate. Earth consists of dry limestone soil is well drained and fertile. Grapes harvested in mid-October, and subjected to 20-day maceration at a controlled temperature. Secondary fermentation, which is called “ripasso”, held in late March with dried pulp left over from wine Recioto. The second fermentation adds strength and sweetness of wine and gives it a unique character. After secondary fermentation, the wine is aged in large oak casks for 12 months, and then another 3 months in bottle.

Fabiano company was founded in 1912, when Francesco Fabiano opened a wine shop in Venice, just a few steps from St. Mark’s Basilica.
