Description

Fongoli, “Serpullo” Montefalco Rosso Riserva Naturale – aromatic, strong, powerful wine that can be stored and evolved over a long period of time. It is made from Sangiovese, Sagrantino, Cabernet Sauvignon and Merlot grapes grown according to biodynamic methods on steep clay slopes with southern and southwestern exposure. The vines are protected only with copper, sulfur and biodynamic preparations, which are aimed at improving the humus of the soil. No chemical products are used. Harvested from 40-year-old vines from mid-September to mid-October. Fermentation with natural yeast and minimal addition of sulfur takes place in open vats without temperature control. During fermentation, the head of the wort is broken through 3 times a day according to the traditional method. Extract of wine in large Slavonian oak barrels aged from 5 to 70 years lasts at least 3 years. After natural clarification by transfusion, the wine is bottled and matured for another 6 months. Serpullo’s storage potential is at least 15 years. It is recommended to uncork the bottle at least 2 hours before use.
