“Les Chamois du Paradis” – a magnificent wine that combines exquisite sophistication with density, power, dynamism and pungency. This cuv, created by Jean-Francois Ganev in 2011, immediately demonstrated and approved a very burgundy style. For making wine, Chardonnay is used from old vines planted in 1949 on soils of limestone, gravel and red marl, relatively rich in clay and iron oxide. After fermentation with natural yeast cultures, the wine is aged for almost three years in barrels of different sizes. It can be tasted now or stored until 2025. At least 2 hours before use, aeration or decantation is recommended.
