Wine Lourensford, “Chrysalis” White Blend, 2019

Description

Chrysalis Red Blend is a red blend, the cream of Lawrenceford red wines. Harvested from select parcels of the finest individual vineyards, the grapes are expertly and carefully blended to express the essence of the unique terroir. The grapes are hand-picked and fermented separately by variety in 5,000 litre fermenters with regular hand tapping of the must “cap” (pijag). Once fermentation is complete, the must is pressed and the wines are placed in barrels for malolactic fermentation and further maturation. The maturation process takes 19 months in French oak barriques, 64% of which are new. The final blend is created just before bottling. For maximum enjoyment, the wine is recommended to be decanted before drinking.
