Description
For the production of excellent sweet wine “Suavissimus” use the best Garganega grapes from old vineyards growing in Monte Zoppega and Monte Tondo. Harvesting takes place during the second half of September to the end of October. Then the grapes are placed in boxes and left in a special drying room until March. After pressing start the fermentation process in barriques, then the wine is aged on the lees in barrels until mid-December. Before bottling the wine is “resting” a few months in steel tanks, and after filling matures in bottles for about a year.
