Wine Paitin, “Sori’ Paitin” Vecchie Vigne, Barbaresco DOCG, 2015

Red wine “Sori Paitin Vecchie Vigne”, Barbaresco DOCG is without doubt the jewel in the range of tasting farm Paitin. The wine has a great aromatic complexity and a generous fruity character, where many shades merge together to form a perfectly balanced, elegant taste. The richness, intensity and expressive aroma flavor characteristics of wine are the result of using grapes harvested from old vines. Vineyards Nebbiolo varieties were planted on the best plots of the commune Neiva in 1953 and now produce limited harvests of high quality. Fully ripe grapes are harvested in late September. In the production of wine brothers Giovanni and Silvano Paschero Elia using a skilful combination of traditional and modern methods of vinification. The berries are fermented in special tanks Steel horizontal (rotofermenterah) for 10 days at a controlled temperature of 26-28 C. The wine matures for 36 months in large Slavonian oak barrels and 2 months in stainless steel containers. Before bottling the wine is not filtered. “Sori Paitin Vecchio Vigne” Barbaresco 2008 is ready to drink now, but can also be stored in the bottle for 10-15 years or longer.
Wine has repeatedly noted high marks influential wine critics, and several times won the award, “three glasses” by the popular Italian magazine Gambero Rosso.
