Description
Wine “Sanvigilio” Merlot is made from Merlot grapes grown in the vineyard in the mountainous area in the valley of the Adige River. Harvested at the end of September, when the berries reach their maximum maturity. During the process of vinification meets an experienced professional Anselmo Martini. Fermentation occurs in stainless steel vats at a temperature of 26-28 C. The wine is aged in steel tanks and oak barrels.
The company “Cavit”, in existence since 1950 – it is a community, a corporate group established winemakers Trentino in order to increase control over the quality of wines produced and simplify the process. Today “Cavite”, lying on the north-east of Italy, takes care of almost 4500 small wineries, protecting their interests. “Cavit” produces more than half of all wine produced per year in the region of Trentino (65%). Total property is 7000 hectares of vineyards.
