Description
“Capitel San Rocco”, Valpolicella Ripasso Superiore – red wine, created using ancient winemaking technique called “ripasso”. The essence of this technology lies in the introduction in March of the Valpolicella wine, produced in the autumn, pomace of Amarone, “provoking” the re-fermentation. This process increases the level of alcohol, improves the content and structure of the wine, improves durability as well as developing new flavors that create an interesting and complex bouquet. After refermentatsii wine is aged 1.5-2 years in oak barrels and 6 months in bottles. At the peak of ripeness vintage 2011 will be in the period from 2014 to 2019.
