Description
Among the scenic places in the territory of the Tuscan winery Tolaini, there is a mountain, which is a small grove. Many centuries ago, local landowners staged “bird” hunt alluring prey with the help of specially trained birds singing. Translated from Italian “passo” – trail path. So, in honor of this beautiful area, wine “Al Passo” got its name.
“Al Passo” is a traditional wine farm and a modern incarnation of the classic blend of Sangiovese and Merlot. The process of winemaking involves malolactic fermentation, and of the wine ferments in steel tanks, and some – in barriques of French oak, 20% of which are new, while the remaining 80% is used for the second time. The alcoholic fermentation is carried out under conditions of thermoregulation: 20-25 days the wort is kept in contact with the skin. A prerequisite is a regular process remontazh (every 6-8 hours). Wine “Al Passo” demonstrates intense seductive bouquet and balanced taste. It has a good potential for development.
