Description
“Rapace”, 2010 – the result of one of the many experiments Andrea Kortonezi with red grapes. The wine is a blend of Sangiovese, Merlot and Cabernet, grown in the southeastern part of Montalcino. The name “Rapace”, which means “bird of prey”, is in full compliance with the name of the economy. The manufacturing process begins with cold maceration on the skins and fermentation at a temperature of 10-12 C, which lasts 20-25 days in steel tanks and is accompanied by regular pumping of the wort. The growing activity of natural yeast leads to the top of malolactic fermentation, which is replaced by exposure in French oak barrels for 18 months and then continues in the bottle for about six months.
