Description
“Gatto Matto” Inzolia – refreshing dry white wine made from Inzolia grapes grown on the island of Sicily. The crop is harvested when the berries reach the optimum level of ripeness, after which the grapes are carefully delivered to the winery, where they are subjected to careful sorting and soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature of 20 C for 14 days. This is followed by bentonite clarification and single filtration.
